Flathead
Although flathead was once the fish, with its sweet, tasty, tender white flesh, its popularity has waned in recent years, possibly because of its many fine bones.
There are many varieties of flathead in Australian waters, the tiger and sand flatheads probably being the most choice. Some authorities rank the tiger flathead second only to John Dory for flavour.
